Due to the complexity of the wine harvest, the strict selection of grapes, the mysterious intervention of Botrytis Cinerea and the care needed for blends to be successful, Sauternes wines are rare and renowned.
Rarity : It is difficult to produce more than 6 million bottles a year, i.e. 50 times less than the average Champagne production. On average, Sauternes wine-growers produce only 17 hectolitres per hectare,
far less than the 25 hectolitres per hectare authorised. To give an idea of what this means, it is customary to say in the Sauternes region that each vine produces only 1 to 3 glass of wine !
Reknown : 26 grand-cru wines from the Sauternes and Barsac vineyards distinguished themselves in the 1855 classification, which means that, in view of the small area of the vineyards, they are the leading AOC in terms of the number of classified vintages.
These classified vintages include Chateau Yquem, considered by major experts to be one of the greatest wines in the world, if not the greatest.
Their rarity and renown are undoubtedly the two reasons why many of our contemporaries keep Sauternes wines
for the grandest occasions and greatest dishes, in particular at Christmas and the New Year.
